Ingredients for 4 people:1.7 kg of nicchi (tellina a type of clam) to be shelled 4 eggs 60 ml of extra virgin olive oil parsley salt and pepper to taste.


Purge the nicchi of sand by leaving them for at least 24 hours in salty water, put them in a wide, low casserole, cover and cook briefly over a high heat to open them. Shell the nicchi and throw away the shells. In a bowl, beat the eggs and season with the chopped parsley, salt and pepper and add to the shelled nicchi. Cook the frittata (omelette) on both sides in a pan with hot oil and when cooked, dry with kitchen towel.

Once the frittata is cooked, a drizzle of extra virgin olive oil is recommended, using quite a sweet oil.
